Only a month and half late on this one! I know when you make caramel, the less you stir the better (or it gets dry and grainy because the sugar crystals want to clump together when you're stirring).
I haven't made no-bakes forever but if you're stirring them a lot when they're boiling, you might have the same effect. Just try stirring them only a little, or just swirl the pot occasionally.
Not a clue. I know it has to do something with the boiling and stuff, but I have yet to figure it out!
